I have never reviewed anything on amazon before but this book is so brilliant, I am compelled to do so. I have MANY vegan cookbooks but I have to say I have not purchased a book of this competence about vegan pressure cooking. I read an earlier review that states the person was unhappy with the lay out. I don’t understand this. I think this book is beautiful and I like the layout. Each recipe has its own page and is designed with a working cook in mind succinct and flows well as you follow along . Also each recipe has its own irresistible introduction including how and what to serve the dish with as we. Lived up to my high expectations. What a terrific book. Perfect for someone new to pressure cooking, which I am, having had my Instant Pot for a little over a month. The book has so much more than just the wonderfully delicious sounding recipes. It provides information on what and how to pressure cook, how to choose a pressure cooker and how to translate traditional recipes into pressure cooker recipes. A surprise to me was the chapter for creating your own spice blends and another chapter on "Toppers: Sauces, Fillings and More" to add more flavor and interest to your food. This book will be a go to reference for me.. Fantastic! Lots of Great Recipes, Clear Instructions, Perfect for Instant Pot and Other Electric Cookers as Well as Stovetop!
